Sundried Tomato and Carrot Soup
Oh dear, I missed the deadline for No Croutons Required. This is a soup Ive been making for years with carrots and tinned tomatoes, but Ive never included sun-dried tomatoes before and it certainly added a depth of flavour to an already gutsy soup.
Its pretty easy, just an onion, some peeled and chopped carrots, 2 tins of tomatoes, some stock and about 6 sun-dried tomatoes. Cook them up until the carrots are soft, then liquidise or blitz until smooth.
