Cheesy Beefy Nachos



Since the first of the year when I started taking pictures of every dinner I eat, I have begun to feel more and more pressure to prepare well balanced healthy meals.  Dont get me wrong, I think for the most part, my meals are nutritional and they are made with fresh ingredients.  I dont eat a lot of fried foods and hardly ever consume any processed foods.  So, I guess what I am doing here is desperately trying to justify this indulgent plate of nachos I fixed myself last night.  I wish I could say that it wasnt worth all the calories (though, I must admit to suffering with heart burn all night) but it was fabulous!  I love nachos and have made them thousands of times and millions of different ways, but these may win my own best ever award.

Not that nachos require any instruction to make, but since the point of the blog is to tell you what I fixed for dinner, here goes. I took a half pound of ground beef from the freezer, thawed it in the microwave and immediately browned it in a skillet.  I then added a half packet of Ortega (I like Ortega because it does not contain MSG) some water and a squirt of ketchup.  While the meat was left to simmer for a few minutes I prepared the toppings. Generally, I use freshly grated cheese and bake the nachos in the oven similar to those you get in your favorite restuarant, but I recently purchased some queso dip and decided to make these more like the ball park version.  So I heated the cheese in a small sauce pan on the stove with a splash of water for a thinner consistency.  I chopped some onions, shredded some lettuce and piled a tower of chips on my plate.  To assemble, evenly distribute the seasoned meat mixture over the nacho chips, drizzle the queso making sure to evenly cover the meat and chips and tumble the onions, lettuce and jalapeno slices down over the top.  I would have enjoyed a chopped tomato as well, but none in the pantry, so jarred salsa played the roll of a fresh tomato.  Enjoy!

If you have a Super Bowl party that you will be hosting or attending next month, I promise this would be a huge hit.  Just be sure not to make this version too far in advance because the chips will grow soggy and limp under the melted cheese.  Just transport the ingredients, heat the cheese when you arrive and assemble all just before eating and you will have a room full of happy footballers!
