Crispy Breaded Okra Crunchy Ladiesfinger
If your kids hate to eat okra, Try this. Its like nuggets kids would love it!
Ingredients
Okra-10 (Chop into thick slices)
Maida flour-5tbsp
Pepper- 2tsp
Salt to taste
bread crumbs- 1/2cup
Oil to fry
Method
Take a bowl, add maida, pepper, salt and little water mix into thick batter. Dip the okra slices into the batter and coat with bread crumbs. Deep fry the okra slices in hot oil till golden brown.Serve with Tomato sauce and Ranch.

Ingredients
- Eggs 2 separated
- Milk 1 cup
- Sugar 3 ounces
- Gelatin 1 tsp dissolved in ¼ cup milk
- Pineapples chopperized ½ cup
- Pineapple essence few drops
- Yellow color few drops
- Fresh cream whipped 1 cup
Method
- In a pan heat milk with 2 egg yolks and sugar, cook stirring constantly till slightly thick, add dissolved gelatin, keep aside till cool, add chopperized pineapples, essence, color, fresh cream and fold in to beaten egg whites, in a glass bowl pour mousse chill till set, decorate with fresh cream, pineapples and cherries.

Kashmiri Pulao
Ingredients for stock
- Mutton ½ kg
- Cinnamon 1 stick
- Ginger 2 inch piece
- Garlic 6 cloves
- Onion 1 medium
- Coriander seeds 1 tbsp
- Salt 1 tsp
- Water 4 cups
Ingredients for rice
- Rice ½ kg
- Onion 1 large
- Ginger garlic paste 2 tsp
- Mixed whole spices 1 tbsp
- Yogurt 1 cup
- Green chilies 4
- Saffron ¼ tsp
- Oil ¼ cup
- All spice 1tsp
Ingredients for garnish
- Almonds whole 8 to 10
- Raisins 2 tbsp
- Brown onions 2 to 3
- Hard boiled eggs 2
Method for stock
- Put mutton in a pan with 4 to 6 cups water.Make a spice bag with ginger garlic, onion and coriander seeds, tie tightly and add to the mutton with 1 ½ tsp salt, cook till mutton is tender and 2 ½ to 3 cups of stock are left.
Method for rice
- Soak rice for 30 minutes .Heat ¼ cup oil and fry onion till light golden.Add whole spices and fry. Add ginger garlic paste, 1 cup yogurt and boiled mutton, fry well add soaked rice and the left over stock.
- Cook till rice is done, sprinkle saffron, 1 tsp all spice powder, cover and simmer for 5 minutes.Remove In a platter garnish with fried onions, boiled egg and fried dry fruits.

Pork Confit Part 1 A Fine Brine for Swine
Well, as you may have read in another post a few days ago, I’m getting ready to leave for Sonoma for the Dry Creek Valley “Passport” event. So, as warned, here is another older clip converted from my previous blog. It will be new to most of you and is a classic recipe. In part 1 of this 2 part demo, we will make a “brine” for a pork shoulder which in part 2 we will then “confit.” If you saw our duck confit clips you already know that confit means to cook meat for a very long time, at a low temperature in its own fat and juices. For this pork version we are going to brine the pork first, for 48 hours, to make it even more succulent.
Brines are getting very common these days. Many restaurants brine those big thick pork chops before they hit the grill to make them extra juicy. If you’ve watched Food TV over the last few weeks you probably saw dozens of turkeys getting a dunk. There are thousands of brine recipes, but they usually all contain salt, sugar and some types of spices. The brine you’ll see me prepare here is a fairly standard mix, and a great all-purpose version. Remember, your brine will only be as good as the spices you use in it, so use fresh, top-quality varieties.
By the way, the cut of pork we are using is a pork shoulder, which is more commonly called a pork “butt” in the meat market. Why would they call a shoulder a butt? Well, let me take you back to colonial New England. Back then the upper class preferred the more tender cuts like the loin, which is found along the back (top) of the pig (that’s where the expression “high on the hog” comes from). The lower classes were left with the tougher, “lower,” cuts like shanks and shoulders. These cheaper cuts were packed and shipped in barrels called “butts.” Eventually the pork shoulder became known as a Boston butt, or just plain pork butt. I know…fascinating! With info like this you’ll be a real star at that next cocktail party.
In our next clip, we’ll “confit” the shoulder, and then…well, you’ll just have to watch part 2.

Chunky Sloppy Joe Ultimate Nachos
What to do with a little bit of leftover sloppy joe? I had dinner at my moms after work on Friday and she suggested we make nachos from the leftover sloppy joe she had remaining from Thursday nights dinner. She loves nachos and swears that she can never make them to her liking. So when ever she needs a fix its Amy to the rescue. By the way, the only reason my nachos might be better, in her eyes, is because she is always stingy on the cheese due to her fear of too many calories, too much fat, yadda, yadda, yadda, while I (when it comes to nachos) am concerned only with the taste. The key to delicious nachos is cheese and plenty of it. Also its a good idea to layer the chips, meat, cheese, onions and jalapeno slices on a baking sheet, pop it in the oven to melt the cheese and heat everything up. Then top it with some freshness! A fresh salsa or relish on top is a great contrast to the rich warm meltiness. I like to make a chunky salsa of chopped tomato, avocado, black olives, fresh cilantro, salt and lime juice. Top it all with a little hot sauce and maybe some sour cream!
Basic Tomato Gravy Sauce Base for all types of gravies and curries
In hotels and restaurants they make this basic tomato gravy in batches and store for few days. This tomato gravy is the base for all the gravies and curries you order at an restaurant. For example if you order for paneer butter masala, this gravy is used as base, to this they add the other ingredients like panner, kasuri methi, butter and heavy cream. With this basic gravy you can prepare as many gravies and curries as Channa Masala, Paneer Butter Masala, Peas Masala, Chicken tikka Masala, Lamb Curries etc.
Ingredients
Tomatoes Large-10
Garlic cloves-15
Ginger piece-3"( Chopped)
Black pepper corns-1tsp
Cumin seeds-3tsp
Dried Bay leaves-5
Green Cardamoms-6
Cloves-6
Method
Boil the tomatoes in hot water for 3 mins or microwave tomatoes for 1 minute. Peel off the tomatoes skin and chop them. Add the chopped tomatoes, ginger, garlic and whole spices and 5 cups of water in a pan. Cook the mixture on medium heat till tomatoes are tender and cooked. Cool the tomato mixture, remove the whole spices and puree in blender till smooth consistency.

SANDRA’S NO FAIL EASY N MOIST MEATLOAF
A fabulous meatloaf that continues to stand the test of time in flavor and texture... |
Prep: 10 Mins.
Bake: 1 Hour
Stand: 10 Mins.
INGREDIENTS:
Meatloaf:
1-1/2 lbs. lean ground burger (I used moose)
--Or, feel free to use ground venison, elk, caribou, or buffalo
1 large egg, beaten
2 teaspoons dried minced onion
2 tablespoons milk
1/3 cup chili sauce
2 teaspoons cider vinegar
1 teaspoon worcestershire
½ cup Italian seasoned bread crumbs
½ teaspoon Italian herb seasoning
½ teaspoon Kosher salt
½ teaspoon freshly ground pepper
Topping:
¼ cup chili sauce
METHOD
Preheat oven to 350 degrees. Spray a 5”x9” loaf pan, and set aside.
In a medium bowl, combine burger, beaten egg, dried minced onion, milk, chili sauce, cider vinegar, worcestershire, bread crumbs, Italian herb seasoning, salt, and pepper. Place into prepared loaf pan. Bake for 30 minutes.
Remove from oven and top with remaining chili sauce, return to oven and continue baking for 30 additional minutes.
Remove from oven, and let stand 10 minutes for juices to redistribute.
Slice into 8 servings. ~ Enjoy!

Chicken pieces with bone - 500 gms
Potatoes peeled and diced - 2 nos
Onion chopped - 1 no
Curry leaves - few
Ginger & Garlic paste - 1 tbsp
Thick coconut milk - 500 ml
Sugar - 1 tsp ( optional)
Salt to taste
Oil - 2 tbsp
Lemon Juice - 1 tsp
For Curry powder
( roast and grind below ingredients to powder)
Coriander seeds - 3 tbsp
Cumin seeds - 1 tbsp
Dried red chillies - 4 to 5 nos
Peppercorns - 1 tsp
Cinnamon stick - 2" piece
Fried onions to garnish (optional)
Method
1. Heat oil in a pan, when hot add onions, curry leaves and saute till onions browned.
2. Add ginger & garlic paste and saute till raw smell leaves.
3. Add potatoes, chicken pieces and curry powder to pan. Saute until chicken turns pale.
4. Add 1 cup coconut milk and 1/4 cup water to the pan, simmer chicken covered on medium heat for 15 mins.
5. Uncover pan add rest of coconut milk, sugar and salt, simmer curry uncovered for few more mins until curry thickened.
Serve hot chicken curry garnished with fried onion rings and drizzle lemon juice on top.

GARLIC POTATO WITH TANDOORI CHICKEN
Ingredients:
- Chicken 1
- Small potatoes ½ kg
- Ginger garlic paste 1 tbsp
- Tandoori masala 1 packet
- Lemons 3
- Green chilies 3
- Salt to taste
- Oil to fry
For potatoes:
- Garlic (chopped) 6
- Crushed black pepper 1 tsp
- Salt to taste
- Cumin seeds 1 tsp
- Oil to fry
- Wash the chicken pieces and add in 1.2 cup yogurt, 1 tbsp ginger garlic paste, 1 packet tandoori masala, salt and 3 lemon juice. Boil it and when the water dries take some oil in the wok and add the prepared chicken in it. Fry the chicken and take it out and keep it aside. In the same oil add in chopped garlic and fry it till it is golden brown. Then add in the potatoes. Add in 1 tsp crushed black pepper, salt, roasted and crushes cumin seeds and lemon. put the chicken out in the dish and put garlic potatoes on its sides. Garnish it with green chilies and serve.
Pasta with Garlic and Oil
Simple ingredients - amazing taste. I was totally blown away by this dish. I was expecting it to be good, since it came from Americas Test Kitchen, but I wasnt expecting it to be that good. But when you stick to the basics - garlic, olive oil, a little lemon juice and parsley, you cant go wrong. This was sooo tasty, especially with some good leftover Italian bread (doctored up with a little butter, Parm. cheese, and garlic) and a big salad; it made the perfect comfort food meal. Definitely put this one on your list of recipes to try! Just dont do it for a dinner party, because your breath with smell very strongly of garlic. :)

Pasta with Garlic and Oil (Pasta aglio e olio)
1 lb. spaghetti
salt (sea salt or table salt)
6 T. olive oil
20 garlic loves from 1-2 heads, minced (4 T. total)
3/4 tsp. red pepper flakes
3 T. chopped fresh parsley
2 tsp. juice from 1 lemon
1 oz. grated Parmesan cheese (1/2 cup) (optional - but very good)
Bring 4 quarts of water to a boil in a large pot. Add pasta and 1 T. salt and cook, stirring often, until al dente (see package directions). Reserve 1/3 cup of the pasta cooking water; drain pasta and transfer it back to the pot.
Meanwhile, heat 3 T. oil in a nonstick skillet over medium-low heat until just shimmering. Add 3 T. garlic and 1/2 tsp. salt and reduce heat to low. Cook, stirring constantly, until the garlic foams and becomes sticky and straw-colored, 10-12 minutes (you may need to turn your heat up a bit depending on your stove). Off the heat, add remaining T. garlic, pepper flakes, parsley, lemon juice, and 2 T. pasta cooking water to the skillet and stir well to keep the garlic from clumping.
Transfer the drained pasta to a large serving bowl (or throw back in your pot if youd like). Add remaining 3 T. olive oil and remaining pasta cooking water and toss to coat. Add the garlic mixture and 3/4 tsp. table salt (or 1 tsp. sea salt flakes) to the pasta. Toss well to combine. Serve immediately with optional Parmesan cheese, if desired.

Ingredients
- Oil 3 tbsp
- Cheddar cheese 50 gm
- Parmesan cheese 25 gm
- Fresh cream 4 tbsp
- Vinegar 1 tbsp
- Parsley chopped ½ bunch
- Pasta ½ packet
- Salt to taste
- Black pepper ¼ tsp
- Celery stick chopped 1
Method
- Boil pasta and keep aside.In a bowl mix together 50 gm cheddar cheese, 25 gm parmesan cheese and 4 tbsp fresh cream. Mix well.Add in salt to taste and ¼ tsp black pepper.Heat oil in a wok, add in 1 chopped celery stick and ½ bunch of chopped parsley. Fry for 1 – 2 minutes. Now add boiled pasta and mix well for a few minutes. Then add cheese sauce and cook for 2 – 3 minutes, dish it out and serve hot.
Banana and Raisin Loaf for Tea Time Treats
In 2008 when this loaf was first posted, I wasnt aware of many cooking and baking challenges, in fact I doubt if there were many. However since then they have multiplied to the stage where I struggle to get them all done! That and the fact that we still have a ton of baking left over from Christmas and are trying not to eat too much of it at once means that I know Im not going to get anything made for Tea Time Treats this month so Im resurrecting this post as my entry!
This month (January 2012) the theme is Sweet Pastries and Breads and its being hosted by Karen at Lavender and Lovage
Im afraid this recipe is all in imperial measurements but you can find a convertion table at Delias website here
Banana & Raisin Loaf
4oz butter
4oz sugar (can use either white or brown or a mixture)
Beat these together
Add 2 eggs
Then add
3 or 4 ripe bananas (you could leave one for the end and mash it less)
Sift and fold in
8oz self-raising flour
1/2 tsp Bicarbonate of Soda
1 tsp ground cinnamon
5oz Raisins
Bake at 180C for 45 minutes
Its quite possibly the easiest recipe and it always turns out well, even people who dont like banana loaf tend to enjoy this one.

I made Carolyns Banana and Raisin Loaf again. Yes, I had those three black bananas in the fruit bowl! This is a very forgiving recipe as it is supposed to be baked at 180C, however I was also making a cake for my mums birthday and it needed to be in at 150C, so I just put the loaf at the top of the oven (still hotter even with the fan) and left it in for longer. I even managed not to burn it this time, so maybe longer at a lower temperature is better!

Easy Chicken Enchilada Casserole Layered New Mexican Style
This easy make-and-bake gluten-free casserole recipe is perfect for a weeknight supper or a pot luck dinner. Especially during all the pre-holiday mishegas. Use corn tortillas. Make it as spicy or as mild as your taste buds prefer.
CHOCOLATE PECAN ICE CREAM CUPS
I tried this recipe for the first time, this week, and it has a LOT of potential. I think it will take another time (or two) to get the upper edge thick enough to hold its shape perfectly, but other than that, the chocolate cups are really delicious. You have to keep them in the freezer, but even frozen solid, they are the consistency of a GOOD fudge. They are super simple to make and fun to have on hand in the freezer.
2 cups semisweet chocolate chips
14 ounce can of sweetened condensed milk (not evaporated)
1 cup finely ground pecans (I used the food processor)
In a heavy saucepan, over low heat, melt chocolate chips with sweetened condensed milk. Stir until very smooth then stir in finely chopped pecans. Insert paper liners into cupcake tins; spread about 2 tablespoons of this mixture on the bottom and up the sides of the paper liners. Freeze for at least 2 hours. Remove paper liners and fill with a scoop of your favorite ice cream. Makes about 18 cups.
NOTE: I melted my chocolate with the sweetened condensed milk in the microwave (on high); it took about 30 seconds, stirring half way through.
NOTE: Recipe calls for finely ground pecans. I used the food processor to chop the nuts super fine.
NOTE: Make sure you leave the chocolate at the top edge of the cupcake paper nice and thick, so it doesnt break/tear when you remove the paper. Chocolate cups are not super hard/brittle like other chocolate cups.
NOTE: Letting the chocolate cups sit at room temperature for about 3 or 4 minutes before removing the paper liner, makes it easier.

Breakfast cups
I received a phone call last week from an old high school friend that I have not seen in eight years. She was coming to town. Yeah! So we decided to do brunch. I had a great time getting ready for her visit and preparing a menu.
I know quiche is a popular brunch item, but I cannot bring myself to eat it. I have not found a recipe yet that I really like so I decided to come up with my own brunch dish.
I was thinking of using pastry puff, but already had a pastry dish on my menu so I opted for phyllo dough. Now some people are intimidated by this stuff, but the secret is moisture. I prefer a wet paper towel to drape over the exposed dough in order to keep it from drying out.
I cut the dough into squares big enough to fit into a muffin pan.
Then I layered the sheets into the muffin pans, brushing with butter between each sheet. About 8 sheets per muffin cup. Its not looking too appetizing at this point, but I promise it will be.
I cooked up some breakfast sausage, 1 pound, from our pig that we bought from a local 4-Her.
And then scrambled up some eggs, that we also buy local, about 12 and a splash of water mixed in.
Side note: I really debated cooking these beforehand or just putting them in the cups raw and letting it bake in the oven with the dough. I decided to scramble them before because they would need more time to bake than the dough and I didnt want to risk burning the dough or having raw runny eggs.
Shred some cheese, about a cup or so.
I mixed the cheese, eggs and sausage and divide up into the muffin cups.
Then I baked them at 350 until they were a pretty brown. Sorry, I didnt pay attention to the time.
I topped with green onion and served. They were great. Im so glad I ditched the quiche :)
We had an awesome time visiting and hanging out. It has been way too long and I need to be more proactive to not let that happen again. Good friends and Good Food, always a sure bet for a good time!!

I was thinking of using pastry puff, but already had a pastry dish on my menu so I opted for phyllo dough. Now some people are intimidated by this stuff, but the secret is moisture. I prefer a wet paper towel to drape over the exposed dough in order to keep it from drying out.
I cut the dough into squares big enough to fit into a muffin pan.
I melted butter, (yum)
Then I layered the sheets into the muffin pans, brushing with butter between each sheet. About 8 sheets per muffin cup. Its not looking too appetizing at this point, but I promise it will be.
And then scrambled up some eggs, that we also buy local, about 12 and a splash of water mixed in.
Side note: I really debated cooking these beforehand or just putting them in the cups raw and letting it bake in the oven with the dough. I decided to scramble them before because they would need more time to bake than the dough and I didnt want to risk burning the dough or having raw runny eggs.
Shred some cheese, about a cup or so.
I mixed the cheese, eggs and sausage and divide up into the muffin cups.
Then I baked them at 350 until they were a pretty brown. Sorry, I didnt pay attention to the time.
I topped with green onion and served. They were great. Im so glad I ditched the quiche :)
We had an awesome time visiting and hanging out. It has been way too long and I need to be more proactive to not let that happen again. Good friends and Good Food, always a sure bet for a good time!!

These quick, easy, moist, fudgy, addictive peanut butter brownies are the perfect accompaniment to a big glass of cold milk.

I usually just put my baked goods in a decorated large foil pan, but Im looking for something a little different this year...maybe more festive? Any ideas?

Slow Cooker Braised Pork Shoulder Roast with Apple Butter Sauce – Reducing the Need for Roux
Man, I’ve been making a lot of rouxs lately (which you’ll be seeing in all their buttery glory in a series of upcoming holiday videos), but for this apple cider braised pork roast, I wanted to keep things a little lighter and decided to use a classic reduction.
We’ve done dozens of similar style sauces, but most of those were traditional pan sauces, where the skillet is deglazed with some kind of flavorful liquid, which is reduced down, and finally finished with butter.
This is basically the same technique; except here we’re reducing the braising liquid from the slow cooker while our pork rests. By the way, I keep saying “cider” because it sounds and looks better in print, but I actually used apple juice. Both work very well, but a just-pressed, unfiltered cider would be my official recommendation.
One thing to remember about these types of reduction sauces is that a little goes a long way. You’re taking an already flavorful liquid and reducing down to maybe 25% of its original volume. This is also the reason you shouldn’t season it until the end. After the cold butter is whisked into the sauce, and your herb of choice has been added, give it a taste and adjust for salt then.
Since we’re using a relatively small amount of braising liquid for this big a hunk of meat, I decided to use the slow cooker. You can certainly do this on the stovetop, over very low heat, or in a slow (275 degrees F.) oven, but neither is quite as convenient. Regardless of your cooking method, I hope you give this delicious pork shoulder a try soon. Enjoy!

Hyderabadi Chicken Dum Biryani
Hyderbadi Chicken Dum Biryani |
Ingredients for the Rice
Basmati rice - 4 cups
Cardamom - 2
Cloves - 2
Cinnamon - 2"
Bay leaves - 2
Water - 6 cups
Salt to taste
Oil - 1 tbsp
Ingredients for the chicken gravy
Chicken with bone - 750 gm
Onion chopped - 2 nos
Tomato chopped - 2 nos
Mint leaves/ Pudina chopped - 1/2 cup
Coriander leaves chopped - 1/2 cup
Green chilli whole - 1 no
Ginger Garlic paste - 2 tbsp
Curd - 2 tbsp
Red chili powder - 1 and 1/2 tsp
Turmeric powder - 1/4 tsp
Coriander powder - 2 tsp
Cumin powder - 1 tsp
Fennel powder - 1 tsp
Cardamom - 2 nos
Clove - 2 nos
Cinnamon - 1" piece
Bay leaf - 1
Oil - 3 tbsp
Salt to taste
Water - 1/4 cup
For layering and garnishing
Ghee - 4 tsp
Chopped cashew nuts - handful
Coriander leaves chopped - 1/2 cup
Fried onions - 1/2 cup (optional)
Saffron - 8 strands
Warm Milk - 1/4 cup

Pre-cooking preparation
1. Wash and soak basmati rice in 6 cups water.
2. Soak saffron strands in 1/4 cup warm milk until the milk absorbs color from saffron and turns orange in color.
3. Marinate chicken pieces with 1 tbsp ginger & garlic paste, 2 tbsp curd, 1 tbsp oil, 1 tsp red chilli powder, 2 tsp coriander powder, 1/4 tsp turmeric powder, 1 tsp cumin powder, 1 tsp fennel powder, chopped mint and chopped coriander leaves for at least 1 hour.
Method to make rice and gravy.
1. Heat 1 tbsp oil in a pan, add cinnamon, cardamom, cloves and bay leaves given under rice ingredients.
2. Sauté for few seconds, add rice to the pan along with water in which it was soaked.
3. Season rice with enough salt, stir well, cover pan with tight lid and cook rice until 3/4th done.
4. Heat 2 tbsp oil in a pressure pan to make chicken gravy, when oil is hot add cinnamon, cardamom, cloves and bay leaves given under ingredients for gravy. Sauté for few secs.
5. Add chopped onions, whole green chilli and stir fry for few secs, add 1 tbsp ginger & garlic paste and stir fry until raw smell leaves.
6. Now add chicken pieces along with marinated mixture to the pan, stir fry for few mins.
7. Next add chopped tomatoes, rest of red chilli powder, required salt, stir fry for few more mins and add 1/4 cup water, stir well.
8. Cover pan with lid and pressure cook chicken gravy for 10 mins.
9. Once pressure is released, remove lid and cook chicken gravy until semi dry.
Assembling and putting biryani on dum
1. Keep a heavy bottomed tawa or griddle on medium heat.
2. Grease little ghee at bottom of deep vessel.
3. Spread some gravy along with chicken in bottom layer, then sprinkle chopped coriander leaves and fried onions on the gravy, then layer some rice above the gravy layer.
4. Again spread some gravy along with chicken above rice layer, sprinkle coriander leaved and fried onions continue the same process with rest of the gravy and rice.
5. The top most layer should be rice, sprinkle chopped cashew nuts, saffron milk mixture and rest of ghee on top of rice.
6. Cover vessel with tight lid and place vessel on top of hot tawa.
7. Let vessel stand on tawa for 10 to 15 mins.
8. Before serving mix well and serve.

Chicken with Quinces in a Creamy Spiced Saffron Sauce
I was lucky to find some quinces for sale last week, although I suspect the season is drawing to a close. They are not easy to find, anyway. However, if you are so fortunate as to get your hands on some, this is an excellent thing to do with them.
Since this is a rich and special dish, you may wish to serve it to company. Parts of it can be done in advance, which would make that quite possible. Cook the quinces, shallots and chicken, and put them in one covered container. Simmer the cider and seasonings, strain and keep in another covered container. Then, when ready to proceed, mix them in your pan and cook for the 20 minutes (a little longer to allow them to reheat) and add the cream at the end as usual.
4 servings
1 1/4 hours - 1 hour prep time
6 large shallots
2 large or 3 medium quinces
2 tablespoons butter
500 grams (1 pound) skinless, boneless chicken pieces
1 1/2 cups apple cider
6 pods of cardamom
4 slices of ginger, each the size of a quarter
2 teaspoons coriander seed, ground
3/4 teaspoon salt
1/2 teaspoon saffron threads
the juice of 1/2 lemon
1/2 cup light (5% or 10%) cream
1 tablespoon arrowroot or cornstarch
Peel the shallots and cut them in halves or quarters lengthwise. Peel, quarter, core and slice the quinces. Make sure the chicken is in bite-sized pieces.
Heat 1 tablespoon of butter in a large skillet. Put in the quince slices, and cook them gently for a minute or two. Add the shallots and continue cooking, stirring frequently, until both are softened and slightly browned.
Meanwhile, put the quince peelings into a pot with the cardamom pods and peeled ginger slices. Bring to a boil and simmer, covered, for about 10 minutes, while the quinces, shallots and chicken cook.
When the quinces and shallots are softened and browned, remove them from the pan. Add the remaining tablespoon of butter, and brown the chicken pieces well. Return the quinces and shallots to the pan, and strain the apple cider into it as well, discarding the solids. Grind and add the coriander seed, and add the salt and saffron threads, rubbed between your fingers to break them up a bit. Add the lemon juice.
Simmer for about 20 minutes, stirring regularly, until slightly thickened. Mix the arrowroot or cornstarch into the cold cream until no lumps remain. Stir it into the chicken mixture, and cook until thickened, just a minute or two. Do not let it boil once the cream goes in or it may curdle.
Serve with rice.
Last year at this time I made Christmas Plum Pudding. As I noted, I was late in getting them going, but they were perfectly fine. Its not too late!

Andhra Gunta Ponganalu
Ponganalu are like baked cup cakes, but they are crispy out side and spongy inside. It is the yummy recipe is made with left over dosa batter. It is very simple and easy to prepare snack. kids will love it. To make this recipe you will need a mould/ special skillet. They are available in Indian stores.
Ingredients:
Dosa batter- 2cups
salt to tase
Cumin seeds -1/4ts
Green chili finely chopped-1ts
coriander/ cilantro finely chopped-10 springs
Onions finely chopped-1/2cup

- Potato (boiled mashed) ½ kg

- Coriander leaves ¼ bunch

- Desiccated coconut 3 tbsp
- Tamarind pulp 3 tbsp
- Oil for fry
- Salt to taste
- Finely mash ½ kg potatoes, add in salt to taste and ½ tsp black pepper. Mix well.Blender together ¼ bunch of coriander leaves, ¼ bunch of mint leaves, 3 tbsp desiccated coconut, 4 – 5 green chilies and 3 tbsp tamarind pulp.
- Boil 4 eggs and cut all of them from centre.Remove egg yolks and keep aside.Mix egg yolks with blended green mixture, again fill in boiled egg shells.
- Cover egg with boiled mashed potato.Dip in beaten egg and roll in 1 cup bread crumbs.Lastly deep fry till golden brown and crisp.Cut into two and serve hot.
Pear Cranberry Nut Salad with Blue Cheese
I was surprised and pleased to find some Devils Rock blue cheese from Thornloe Dairy last week, at Zehrs of all places. Since its also pear season, I immediately thought of the classic combination of pears and blue cheese. Since you can maybe still find some romaine lettuce if you are lucky, I put them in a salad.
I was out of walnuts, which is what I think of when I think of pears and blue cheese, but I had some pumpkin seeds and they did very well instead. But really, any nuts will be fine. Use your judgement as to whether they need toasting or not.
The 2 of us ate this as our lunch, but it would probably serve 6 as a side salad.
2 to 6 servings
20 minutes prep time
Make the Dressing:
1 tablespoon apple butter
1 teaspoon Dijon mustard
2 tablespoons walnut or almond oil
3 tablespoons raspberry vinegar
salt & pepper to taste
Whisk or shake the ingredients together in a small bowl or jam jar.
Make the Salad:
1/2 cup walnuts or pumpkin seeds
1/2 of a large head of romaine lettuce
2 medium pears
1/3 cup dried cranberries
50 to 75 grams (2 or 3 ounces) crumbled blue cheese
Toast the nuts or seeds in a dry skillet until lightly browned, then turn them onto a plate to cool.
Wash, trim and tear up the lettuce into bite-sized pieces, and arrange it over serving plates. Peel, core and chop the pears and divide them over the plates of lettuce. Sprinkle over the cranberries and nuts or seeds, and top with the crumbled blue cheese.
Drizzle over the dressing and serve at once.

Melting Moments are a classic biscuit/cookie that are really simple to make and you generally find that you have everything you need to make them. They are supposed to be topped with a piece of cherry like the ones in the Tea Time Treats badge below, however I didnt have any glace cherries in my baking supplies, at first I thought Id leave them plain, then decided that everything is better with a little chocolate added so added a chocolate chunk to each biscuit. If Id thought about it before I might even have replace some of the flour with cocoa powder, next time!

3. Beat together the margarine and sugar until creamy, then work in the egg and vanilla extract.
4. Add the oats and flour and work until you have a soft dough.
5. Divide the mixture into about 20 pieces and roll into balls, you might find this easier if you slightly wet your hands.
6. Roll the cookie dough balls in rolled oats and place 5 cm (2in) apart on the baking sheets. Flatten each piece of dough and place a chunk of dark chocolate in the centre of each.
7. Bake in the oven for 20 minutes or until the biscuits are pale golden brown.
8. Cool on a wire rack

Sourashtrian Special Loula Puri
This is a popular Sourashtrian snack, we prepare this snack very often and my hubby( being Sourashtrian) enjoys this snack a lot. These Loula puri has crispy outside, soft and spongy inside and sure to melt in mouth
Ingredients
Maida/ All purpose flour-1 1/2cup
Sugar-1/2cup
Cardamom crushed-2
Fried Cashew nuts-15( broken into small pieces)
Baking soda-pinch
Water required
Oil to deep fry
Method
In a medium size bowl add maida, sugar, cardamom, baking soda and required water, mix well to make a smooth and thin batter of pouring consistency. Add fried cashew nuts to the batter. Heat oil in a pan to deep fry, when oil is smoking hot take a tablespoon full of batter and drop into hot oil. Depending on the size of pan you can add about maximum of 3 to 5 puris. Reduce the heat and cook the puris on both sides till golden brown and crisp.
